Baked Cod With Vegetables

Ingredients:

- 1 kg of dried and salted cod fillet morhua Bacalanor.

- 2 medium onions, cut into strips

- 02 chopped garlic to sauté and with the cod.

- Cherry tomatoes to taste

- 2 Potatoes cut into slices

- 1 Carrot cut into slices

- 1 Green pepper in slices - Extra virgin olive oil to taste

- Chopped parsley leaves to decorate

Preparation:

The first step is to desalt the cod fillets. This must be done 2 days in advance.

Dip the cod in a bowl of cold water and refrigerate. Change the water two to three times a day within 48 hours for tall batches.

Once the desalting process is complete, the cod must be sautéed with the onions and garlic. Ideally, use a large non-stick skillet.

Brown each side of the cod fillet for 3 to 4 minutes

The cod should be crispy on the outside and soft on the inside.

In a small roasting pan, place the cod fillets, potato slices, carrots, cherry tomatoes and peppers.

Cover the pan with another generous layer of olive oil and bake for 15 minutes and it's ready to!
